Cinnamon is a fragrant spice obtained from the inner bark of trees belonging to the Cinnamomum genus. It has a warm, sweet, and slightly woody flavor with a characteristic aroma.
Cinnamon is used extensively in culinary, medicinal, and industrial applications due to its
unique flavor, aroma, and health-promoting properties. Two main varieties are widely traded:
• Ceylon Cinnamon (True Cinnamon, Cinnamomum verum): Light brown color,
fine texture, sweeter flavor.
• Cassia Cinnamon (Cinnamomum cassia): Darker reddish-brown, thicker bark,
stronger and slightly bitter flavor.
